Old time Southern recipes




Southern Style cooking is just that. What makes it different from other tasty foods is the simplicity of the ingredients. Basically the cooked in flavors of salt, black pepper, lard and the choice of meat which brings out the sharp flavors of the main ingredients is the southern taste of many southern menus. This is a special time of our country that’s waiting to celebrate our new president Obama, the first African American President.

Secrets of the chef would like to share our Southern Food homemade recipes of the week, collard greens southern style. Minerals and vitamins, especially calcium, are power packed into the leafy green vegetable and are a very nutritious ‘must’ for body building blocks and healing energy. The only way to make a better dish of health is to add the southern flavors of grandma’s pantry to make it taste, as good as it ‘is’ for you.


Collards Southern Style

Ingredients :
For a medium size family you’ll need, 3 bunches of fresh collards, 2 lbs. of chicken breast w/skin, table salt1 Tsp, ½ cup of sugar, ½ gal Water, ¼ lb bacon.

Step 1
Wash and Chop collards ‘medium rough’ chop.
Wash Chicken, keeping the skin on.

Step2
Using a pressure cooker w/ about 1/2 gallon of water, add chicken, salt and sugar. Turn stove to medium heat , boil 15 chicken for minutes.

Step3
Add the collards.
- Cover w/ lid and cook for 45 minutes. W/ a pressure cooker you start the ‘timing’ when the steam begins to fizz out of the top of cooker.
- Switch off heat after 35 minutes and let it cool ‘on the stove’. It will cook for another 10 to 15 minutes when you switch off the heat.
When the pressure cooker is cool, open the pressure valve and let all the pressure and steam release; remove the lid.



Use an old timely vinegar pepper sauce with local grown peppers that have been preserved for several months to spice up the collards.
Home made corn bread or home made biscuits is the best addition for this dish but you can add black eye peas and mashed potatoes for a real southern meal.
